Lion's Mane Recipes

ONE POT MEAL (serves 3-4)

I developed this recipe using the Southwest Ancho Lion’s Mane jerky.  Not only is Lion’s Mane known for its profound mental and physical benefits, but it is also really quite tasty. 

Southwest Ancho Lion’s Mane rice

1 Cup    Rice

2 Cups  Water or Veg Stock

1 (2.2oz) package Blue Cap Farms Southwest Ancho Jerky cut in half or quarters

½             Onion diced

1             Hatch pepper diced(they’re in season, but poblano will also suffice)

1 tsp      Cumin

2 tsp      Paprika

1 tsp      Coriander

1 tsp      Salt

½ tsp     Pepper

3             Cloves garlic minced

1 Tbsp   Lemon juice

1 Tbsp   Olive oil

½ Cup    Diced tomatoes

Combine all above ingredients in rice cooker or pot. Cook for factory specified time depending on the type of rice preferred. (I used Jasmine and cooked in an instant pot for 16mins on rice setting.)

Finish with:

  • Whole diced avocado
